Brussels Sprouts with Pomegranate Molasses

Brussel sprouts assert themselves in our diet with a robust flavor profile!  In other words, a lot of people wrinkle up their nose when the vegetable is mentioned. BUT, touch them with a little pomegranate molasses, which has a robust flavor of its own, and suddenly Brussel sprouts become alluring. The health benefits of this vegetable make it impossible to ignore it!  

Brussel Sprouts with Pomegranate Molasses

2 T olive oil and 2 T ghee

1/2 to 3/4 C sliced leeks or green onions

3/4 to 1 pound Brussels sprouts

1/2 C chicken or vegetable stock

1/2 tsp Himalayan salt

3 to 4 T pomegranate molasses

Wash about 3/4 to 1 pound of Brussel sprouts. Remove rough end at base. Slice lengthwise into 3 thick slices. Slice the leeks or green onions until there is about 3/4 cup of slices. Melt 2 T olive oil and 2 T ghee in a sauté pan. Add leeks or green onions and sauté until softened. Add Brussel sprouts, 1/2 C chicken or vegetable stock, and 3-4 T pomegranate molasses.  Sprinkle with Himalayan salt.  Stir and cover.  Sauté over medium heat until Brussel sprouts are just tender. Allow to come to room temperature before serving.
