Sometimes a dessert is called for on Friday night to begin the weekend, or on the weekend, or any time we are feeling the need. This one can even serve for breakfast! But how great to have a dessert that really satisfies and yet fits within the low carb and even keto diet. An added bonus are its health benefits.
Chia seeds enrich us in many ways: omega-3 fatty acids, lots of antioxidants, and fiber, iron, and calcium. For more than you ever wanted to know about Chia seeds, read here. On top of that, I add hemp seeds, another powerhouse ingredient. In addition to all that nutrient-rich goodness, the pudding tastes fabulous and can host a myriad of creative toppings.
Put all ingredients in blender and blend thoroughly. Pour into individual bowls or one big bowl and refrigerate for a minimum of 3 hours.
Toppings: Persimmon slices, Blueberries, raspberries, chocolate chips, pistachios, grain-free granola, dried fruit. Use your imagination.
