Cool and Creamy

It has been a brutal few weeks of intense heat!  That calls for a keto dessert treat that doesn’t require any heat!  You can make this pudding many different ways, with or without the chocolate flavors.  The basic coconut milk, chia seeds, hemp hearts, honey and vanilla extract will give you a simple yet delicious pudding, even possible for breakfast!  The addition of cacao, cacao nibs and toppings allows your creative juices to flow.  Little ones enjoy that part immensely!

Chocolate Chia Seed Pudding

Ingredients :

1 can full fat coconut milk
3 T chia seeds
2 T hemp seeds or hearts
1 1/2 T raw honey or Monkfruit sweetener
1 teaspoon vanilla extract
2 T raw cacao powder
1 1/2 T cacao nibs

Suggested Toppings:

Handful of fresh berries
Dried gooseberries
Toasted coconut flakes
Crushed macadamia nuts
Whipped A2 cream or coconut cream

Directions:

Place all pudding ingredients in a medium-sized bowl.  Stir vigorously and let stand for 5 minutes.  Stir again. Either ladle into individual serving dishes or leave in bowl. Place in fridge for several hours or preferably overnight until thickened. When you plate individual puddings, garnish with any of the optional toppings above.
